Cheese and Pepper Pide

You Will Need

3 cups flour 
1 cup warm water 
1 1/2 teaspoons salt 
1 tablespoon melted butter 
4 oz Kasseri, Cheddar, or Jarlsberg cheese (try all three for fun!) 
Antakya (w/Kasseri) pepper or Urfa (w/Cheddar) pepper or Islahiye (w/Jarlsberg) 
  1. Preheat oven to 475F, heating two baking sheets. You can also use a pizza stone.
  2. Combine flour, salt and water in a mixing bowl.
  3. Stir until mixture forms a ball.
  4. Knead for 5-6 minutes. Feel free to add flour or water if necessary.
  5. Turn onto floured surface and divide into 5 balls.
  6. Flatted the balls into ovals.
  7. Grind the cheese of your preference and mix with a liberal handful of the pepper.
  8. Top the dough with cheese mixture.
  9. Crimp about half an inch along edge of pide to form a border.
  10. Slide the pide onto a hot baking sheet and cook for 12 min until they are crisp and golden brown.
  11. Remove from oven and brush the edges with melted butter.
  12. Serve fresh from oven, and enjoy!
